Priority allergens
In Canada, the most common allergens in food – otherwise known as the priority allergens – are:
- Eggs
- Milk
- Mustard
- Peanuts
- Crustaceans and molluscs
- Fish
- Sesame seeds
- Soy
- Sulphites
- Tree Nuts (almonds, Brazil nuts, cashews, hazelnuts, macadamia nuts, pecans, pine nuts, pistachios and walnuts)
- Wheat and triticale
These allergens must be taken seriously in the production process. Be careful when purchasing products from establishments that claim they are "Free-of" certain allergens, have a conversation with them if they are known to produce or carry products that contain something you or your loved ones may be allergic to.
They should easily be able to answer: "What is our cross-contamination protocol for allergen abc?"
